Talkin' Turkey or Just Blowin' Smoke?

I've always done the turkey in the oven, except for 2003 when I deep-fried it. It turned out like crap because I had a crappy recipe for a lemon injection that made the entire thing taste like bitter-ass lemon rind. Blech.
So this year, I'm leaning towards smokin' the turkey, but can't find rolling papers big enough. Yeah, I'm a riot.
My old friend OPR12 has smoked his turkey and it turned out awesome, so this year I've invited him to give us some guidance on how he did his. Thanks OPR12.
I used a cheap sweet wine with apple juice for my brine. I soaked the turkey for a few hours in this brine, which I also soaked my wood chips in. I strain off the liquid and put in into the liquid bowl over the coals and used it in the smoking process. Check this website to get some ideas. I will be using it again this year, Happy turkey eating!

Matay looks hot in an apron as well. You definately need to try out the Gyro recipe. It ROCKS! Even little squirt loves it. Hopefully baby #3 will too!!
Its on my list of things to cook, but more importantly, when is baby #3 scheduled to arrive? This is the 1st I've heard...
