Deep Kimchee
So me, Matay, and the boys from Matay's office headed to a Kimchee factory, with the guidance of KJ, also from Matay's office. She set the trip up and I'd like to thank her for an awesome time. I learned quite a bit about the history of Kimchee and the different types. Per the comment from the last post, yes Baxter, the smells were fantastic! I did not know that original Kimchee, known by street thugs as the O.K., did not have red pepper in it. The red pepper was introduced to Kimchee by the Japanese. Click to enlarge.

Movie time, we all learned how to make different styles of Kimchee. Side note: Your feet don't stink at a Kimchee Factory...
Below, we all got to make Kimchee. After it was made, we bagged it up and got to take it with us. I'm gonna let mine stew for a week or so.

After the Kimchee portion of the day, Matay showed me the Hwaseong Castle, which was built in 1794. It took us over 3 hours to walk the whole perimeter. Weez, it only involved a small incline at the beginning, but I'll get a climb in next weekend! Through the entire day, I snapped 322 photos. Below are the 4 photos I'm most proud of.
